Espresso foam with peaches

Ingredients:peach espresso foam

8 yolks

8 spoons of sugar

300 ml. cold espresso

500 ml. whipped cream

4 halves of a peach

50 g. almonds

Peach on FoodistaHow to prepare: Beat the yolks with 6 spoons of sugar.Put the vessel in bain-marie and add the espresso. You have to obtain a fluffy cream. Take the vessel off the bain-marie and put it in a vessel with ice. Mix until it cools. Beat the whipped cream with 2 spoons of sugar and add it in the espresso. Put the cream in dessert bowls. Cut the peaches in slicess and add them in the espresso cream. Fry the almonds and sprinkle them on the espresso foam. You can decorate with mint leaves.
