Tiramisu cake with apricots and coffee

Ingredients: tiramisu cake

for the dough:
2 eggs
100 g. sugar
100 g. flour
100 ml. coffee
4 tablespoons cocoa
1 spoon baking powder
salt

for the cream:
500 g apricots
10 g gelatin
250 g mascarpone
300 ml. yogurt
4 envelopes of vanilla sugar
100 g. sugar
300 ml. whipped cream
50 g chocolate

How to bake:
Dough: Beat the eggs approx. 8 minutes with the sugar, a bit of salt and 2 tablespoons of hot water. Mix the flour with baking powder and 20 grams of cocoa and add in the cream. Pour the composition into a cake form with baking paper. Cook for 20 minutes, take it out of the oven and place it upside down. Pour coffee over the dough, then let it cool.
Cream: Peel and cut the apricots in halves. Remove the stones. Mix the mascarpone cheese with yogurt, sugar and vanilla sugar. Dissolve the gelatin in bain-marie and mix with 6 tablespoons of this cream. Then add the remaining cream and leave in the refrigerator for 30 minutes.

Grease the dough with half of the cream with mascarpone cheese. Put 2/3 of the apricots on top of the dough, then add theĀ  rest of the cream. Cover and leave to cool overnight. Graze the chocolate and decorate the cake with it and apricot slices.
