Zabaione with amaretti
Ingredients:
amaretti:
4 egg whites
grind almonds
1 spoon of almond essence
200 g. sugar powder
zabaione:
4 yolks
50 g. sugar
100 ml. white wine
peel from a lemon
juice from one lemon
cinnamon
How to prepare:
Amaretti: Beat the egg whites and add the almonds, essence of almonds and sugar powder. Place the amaretti with a spoon (or with a sprit) on a greased tray. Sprinkle a little powdered sugar on top and bake for 30 minutes.
Zabaione: Beat the yolks with sugar (50 grams) to make a foam. Add lemon peel and the wine. Then beat the composition in bain-marie and add lemon juice and cinnamon.
Put the zabaione in dessert bowls and add the amaretti on top.
